The ultimate Aussie feast

Dish up the ultimate feast this season with inspiration from our favourite seafood providore, Catalano's.

BBQ Grilled Prawns
Serves 4. 30 minutes preparation, 8 minutes cooking

  • 300g Catalano’s Wild Caught Australian Frozen Prawn Meat
  • 40g Butter
  • 2 Garlic cloves
  • Splash of white wine
  • 1 half Long Red Chili
  • Parsley (Chopped)
  • Salt & Pepper
  • 1 Lemon
  • Extra Virgin Olive Oil

1. Defrost your prawns in cold water or overnight in the fridge.
2. To marinate the Prawns, dice the garlic clove, the chili, and a small amount of parsley and add it to the prawns – splash over the white wine and leave in the fridge sealed for 2 hours.
3. To make the garlic butter, dice up the second garlic clove, and add it to a small metal bowl (or heat proof bowl), along with the butter and a pinch of diced parsley.
4. When you fire up the grill, leave the butter next to it, and before putting the Prawns on make sure the butter is melted and mixed.
5. Remove the Prawns from the fridge, season with salt, pepper and olive oil - then give them 1 last mix.
6. Fire up you BBQ grill and get it as hot as you can.
7. Lay the Prawns over the cook for 3 mins, basting them with the garlic butter.
8. Turn the Prawns over and cook for 2 mins, once again basting with the garlic butter.
9. Remove the prawns and add to a wooden plank or serving tray.

Drizzle over some more melted butter, squeeze of lemon juice and a pinch of chopped parsley and you're done!
