If you find yourself lost for time in the morning’s meal prep is a great way to ensure you have a delicious and healthy meal ready for each day. This Woolworths chilli con carne recipe is a delicious one pot wonder, serve it with rice and veggies for a wholesome nutritious meal.
1 tbs olive oil
1 large onion, chopped
2 large red chillies, chopped
2 large green chillies, chopped
2 garlic cloves, crushed
600g Woolworths Australian Regular Beef Mince
2 tsp dried chilli flakes (or to taste)
1 tsp smoked paprika
1 tsp ground cumin
50g tomato paste
400g can diced tomatoes
1 cup beef stock
410g can Woolworths Salt-reduced Red Kidney Beans, drained
½ cup chopped fresh coriander, plus leaves to garnish
steamed rice, to serve
½ cup light sour cream
1. Heat oil in a large frying pan over medium-high heat. Add onion, chilli and garlic and cook for 5 minutes, stirring often until softened. Transfer to a bowl. Increase heat to medium-high. Add mince and cook, stirring with a wooden spoon to break up lumps, until well browned.
2. Stir in spices and tomato paste. Cook for 2 minutes. Add tomatoes, stock and beans, stirring to combine. Reduce heat to medium-low and simmer for 20 minutes until thickened.
3. Stir through coriander. Serve chilli con carne with rice and topped with a dollop of sour cream. Garnish with extra coriander leaves.
