Mermaid Bubbles Recipe

Mermaid Bubbles is a not-so-mythical beverage that not only looks like the ocean on a beautiful summer’s day, but also tastes incredible! Created by the local geniuses behind Beetroot in My Cake, this recipe features a host of good-for-you ingredients with the key being spirulina - a type of blue-green algae that grows in both salty and fresh water and is quite possibly the single most nutrient-dense food on the planet. Team this up with the healing compounds of apple cider vinegar and you have one amazing drink for the kids (and kids alike).

Makes 750ml.

Ingredients
750 ml (3 cups) sparkling mineral water
30 ml (1/8 cup) lemon juice,
½ tbsp apple cider vinegar
2 tbsp honey
1/8 tsp spirulina powder
All ingredients are available for purchase at Coles Garden City.

Method
Mix honey, apple cider vinegar, lemon juice and spirulina powder in 1 cup of sparkling mineral water and stir until combined. Sieve to remove any lumps. Pour in the remaining 2 cups of sparkling mineral water and give a quick stir to combine. Serve immediately or place in the fridge to serve chilled later.
