Lamb Cutlets with Mint Sauce PREP TIME : 10 MINUTES COOKING TIME : 10 MINUTES COOLING TIME : 15 MINUTES MAKES : 2 SERVES INGREDIENTS : 5-6 lamb cutlets Salt and pepper for seasoning 2 tablespoons oil 1/2 cup chopped fresh mint leaves (about 1 bunch), a few leaves reserved for decoration 100g caster or superfine sugar 1/4 cup water from a recently boiled kettle 1/3 cup white wine vinegar Method : 1. Make mint sauce first as the lamb cutlets are quick to cook. Dissolve the sugar in the water in a bowl. Add the mint leaves and white wine vinegar to the bowl and sit for 15 minutes. Blend to create a paste. 2. In the meantime, cook the lamb. Season with salt and pepper and heat a frypan on medium to high heat. Add oil and fry the lamb cutlets for 3 minutes on each side for medium rare cutlets.
